You flip it over for a ribbed grill surface and you get those nice char marks and grease drainage holes which just let the fat melt away from whatever you're cooking. Flip it the other way round and you get a smooth flat surface - perfect for eggs, fish, pancakes... and all that sort of thing where you want a bit of containment rather than a grid. The GreenGrill ceramic cooking surface is 28cm and it covers the whole of the Safari Chef 30 area. And the great thing about it is it's non-stick on both sides - PFOA-free, organic, the works.
